Dobbes Spring Dinner Selections

Spring is a season of rejuvenation, renewal, and new beginnings. As the weather warms up and flowers begin to bloom, it’s the perfect time to explore new flavors and pairings that complement the season. We’ve put together some of the best spring food pairings for four fan-favorite wine varieties: Riesling, Rosé, Pinot Noir, and Syrah.

2021 RIESLING

A great Riesling walks the tightrope between taught acidity and luscious sweetness. With a shorter growing season in Oregon’s Willamette Valley, it’s not every year that the fruit gets fully ripe. At Dobbes our inclination to use fruit from across the state allows us to place Columbia Gorge Riesling and Willamette Valley Riesling right next to each other. Brightness from the Willamette Valley plus roundness from the warmer Columbia Gorge equals a perfect balance, all fermented in stainless steel, preserving freshness.  

Its acidity and fruit-forward notes make it a great choice for pairing with fresh salads, grilled seafood, and light pasta dishes. Try pairing Riesling with asparagus, peas, and fresh herbs like mint and basil for a truly spring-inspired dish. 

Riesling also pairs well with spicy dishes. Some of our team’s favorite pairings for Riesling include Thai or Indian cuisine. The acidity of the wine helps to balance out the heat and spice of the dish. For a delicious pairing, try a spicy curry with a slightly sweet Riesling.

2021 OREGON ROSE

With a balanced beautiful bouquet of grapefruit, tangerine, and apricot, this Rosé also has floral orange blossom, almond, and herbal thyme notes. Upon entry, the wine is smooth, and delicate and displays a balanced, medium-bodied midpalate with mouthwatering acidity. Flavors of strawberry, watermelon, and pear wash over the palate, met with vanilla, lychee, and sweet honeysuckle. The flavors of cranberry and citrus fruits linger with a crisp and refreshing acid-driven finish.  

 Rosé is versatile and can be enjoyed year-round, but it’s especially popular in the spring and summer months. Its light, refreshing flavor pairs well with a variety of spring dishes, including grilled vegetables, seafood, and light pasta dishes. 

For a perfect spring pairing, try a glass of Rosé with a fresh spring salad topped with grilled chicken or shrimp. The acidity of the wine helps to cut through the richness of the protein, while the fruit-forward notes complement the flavors of the salad.

The Grand Assemblage Pinot Noir, our flagship wine, tells the story of both vintage and winemaking at Dobbes Family Estate, with fruit using the highest variety of vineyard blocks going into each bottle. As a LIVE certified winery, we work with our growers to ensure responsible farming and decision making in the vineyard that promotes unparalleled quality in the finished wines. In the winery, we take a great deal of care to make sure every wine hits a standard we are proud of. That means meticulous fruit sorting and fermentation management, the best French oak barrels, a lot of time waiting and even more time tasting. The result is an elevation of quality across the board. 

Pinot Noir is a medium-bodied red wine that pairs well with a variety of spring dishes. Its light tannins and fruit-forward notes make it a great choice for pairing with grilled meats, roasted vegetables, and hearty pasta dishes. 

For a delicious spring pairing, try a glass of Pinot Noir with a grilled salmon with a citrus vinaigrette. The wine’s fruit-forward notes complement the rich flavor of the salmon, while its light tannins help to balance out the dish’s richness.

Palate: This wine draws long on the palate with mouthwatering acidity, and a light but discernible structure. Delicate and fresh, with the crystalline texture of a cooler vintage

2020 SUNDOWN VINEYARD SYRAH 

Sundown has been a mainstay of our Syrah collection for several years, but with the sale of the Vineyard in early 2021, this 2020 offering is the last of its kind at Dobbes. At an elevation of 1600 feet and sloping to the East, this vineyard is perfect for grape varieties that demand ample sunlight but benefit from protection from that hot afternoon sun. Syrah thrives here. LIVE certified, and farmed by one of our favorite Rogue Valley farmers, Michael Moore, we love this wine. We hope you enjoy it, too.   

Syrah is a full-bodied red wine that pairs well with a variety of spring dishes. Its bold flavor and high tannins make it a great choice for pairing with grilled meats, hearty stews, and roasted vegetables. 

For a perfect spring pairing, try a glass of Syrah with a grilled lamb dish or roasted root vegetables with polenta. The wine’s bold flavor and high tannins complement the rich flavor of the lamb or vegetables, while its acidity helps to cut through the richness. 


AROMA: Herbes de Provence, leather, caramel, coconut, banana, marion berry 
PALATE: Like drinking ice cream, this wine is opulent and seductively rich. Soft, ample tannins coat the whole mouth.  The wine lingers, indefinitely. This is a wine that does not need food; it is a meal all itself. 
FLAVOR: Resinous, vanilla, cassis, fennel, clove

Add the ice to a cocktail shaker. Pour in the gin, lemon juice, simple syrup and bitters. 

Secure the lid tightly and shake vigorously until the outside of the cocktail shaker is frosty and cold. Strain the cocktail into a flute glass and top with sparkling wine. Drop the lemon into the glass and serve.

A punchy and playful Rose deserves an equally playful pairing. Our Dobbes Family Winery Rose plays nicely with these pickled strawberries + tangy goat cheese. A colorful and bright bite followed by a slow sip—summer magic in the making!

PICKLED STRAWBERRY & GOAT CHEESE CROSTINI

FOR THE PICKLED STRAWBERRIES: 

  • 1 1/2 cups halved strawberries (enough to fill a jar) 
  • 1/3 cup white balsamic vinegar 
  • 1 tablespoon sugar 
  • Pinch of salt 
  • 1 tablespoon peppercorns 
  • Water to fill the rest of the jar 

FOR THE CROSTINI: 

  • 1 loaf French bread 
  • 4-ounce packages goat cheese 
  • Fresh thyme leaves 
  • Honey for drizzling
  • Pinch of salt 

INSTRUCTIONS:
For the Pickled Strawberries, place the sliced strawberries in a jar. Add the vinegar, sugar, peppercorns, and salt. Top off with water. Secure the lid and shake gently to combine. Place in the refrigerator for at least two hours, or up to two days. The longer they sit, the mushier they get!  

For the crostini, slice your French bread and fry, grill, or toast. Smear the goat cheese on the toast and top with a few strawberries. Smash them gently with a fork. Sprinkle with bits of thyme, a drizzle of honey, and a hit of salt.

2022 ROSE

Our first release of this unique Oregon blend of Pinot Noir, Grenache, Zinfandel, Tempranillo, and Syrah creates a luscious wine with an intriguing flavor profile.

WINEMAKER NOTES:
In 2022, frost in late spring had us fearing dramatically lower yields. Thankfully, when the sun came out, it stayed; boosting yields and ripening our fruit over a record-breaking dry summer. The dry harvest window meant a near perfect vintage for the style of rose I like to make (and drink). I’ve found that the best often harness the freshness and attitude of an early harvested Pinot Noir, with the roundness and flavor of fruit harvested a little later in the seasonUntraditional as we areat Dobbes the latter harvested component is often a bigger red, like Tempranillo, Grenache or, in this case, Rogue Valley Syrah. This Rosé highlights the unique aspects of the two different varietals, coalescing together in one harmonious blend.


TASTING NOTES
COLOR: Pale Salmon
AROMA: Jasmine, fresh linen, strawberry, mineral
PALATE: Built for a front porch and a warm day, this Rosé is all about freshness on the nose. With a clean, crisp, and surprisingly broad midpalate, that seems to last forever, wonderfully bright acidity, and a light lemon pithiness.
FLAVOR: Orange creamsicle, melon, lemon verbena, strawberry

MISO GLAZED SALMON WITH ROASTED BROCCOLINI 

 

Our single vineyard 2021 Symonette Pinot Noir has balanced tannins and acid, with a medium long finish– perfectly paired with this umami salmon. Take a sip and let it linger, like the afternoon breezes from the Van Duzer corridor that dance across Symonette vineyard of the Eola-Amity Hills AVA.

Summer Pairing: 2021 Symonette Vineyard Pinot Noir with Miso Glazed Salmon with Roasted Broccolini

FOR THE SALMON  

  • 2 pounds salmon, sliced into four filets
  • salt and pepper
  • 1/4 cup miso paste
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon brown sugar
  • 1 Tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Chopped green onions and sesame seeds for garnish

FOR THE BROCCOLINI

  • 1-pound fresh broccolini
  • Olive oil
  • Salt and pepper

INSTRUCTIONS

For the salmon, preheat the oven to 375 degrees. Salt and pepper the salmon. In a small bowl add the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil. Wisk together until smooth. Reserve 1 tablespoon of marinade.

In a medium sized bowl add the salmon and the sauce. Let it marinade for 1-3 hours.

Remove the salmon from the marinade, reserving a few tablespoons. Place the salmon on a cookie sheet and surround it with broccolini. Drizzle the broccolini with olive oil and salt and pepper to taste. Bake for 12-15 minutes, or until the fish is almost done and opaque. Brush with reserved glaze and broil on high for 1-2 minutes until fish reaches 125-130 degrees in the center.

Garnish with green onions and sesame seeds if desired.

2021 SYMONETTE VINEYARD PINOT NOIR

The old vines at Symonette Vineyard, are nested into the Southern tip of the Eola-Amity Hills AVA about an hour outside of Portland. The afternoon breezes from the Van Duzer Corridor cool the grapes and preserve their natural acidity, creating bright, fresh wines that also reflect the structure and depth of the terroir. This Pinot Noir was aged 10 months in 21% new French oak, softening some of the wine’s natural intensity. Balanced tannin and acid corset the fruit carrying the wine through the medium-long finish and highlighting the exceptional quality in this single vineyard bottling.

Aroma: Spiced cherry, Umami, rose petal, orange zest, pomegranate nutmeg

Summer Pairing: 2021 Dobbes Chardonnay with Garlic Confit

GARLIC CONFIT

 

Our 2021 Grand Assemblage Chardonnay is an easy one to pair with most of your favorite snacks. With its medium-long finish, carried by citrus-driven acidity, we love it with a simple baguette that has been smothered in a nutty garlic confit. Cooking up quick, you’ll be sip-snacking the summer night away.

FOR THE GARLIC

  • 3 heads garlic, broken into cloves, ends trimmed, peeled
  • 1 cup extra-virgin olive oil
  • 1 crispy French baguette, sliced and toasted
  • Flaky salt
  • Honey to drizzle

INSTRUCTIONS

Combine the garlic cloves and olive oil in a small saucepan over medium-low heat and bring to a gentle simmer. Lower the heat, all the way, to maintain a gentle simmer, for 45 minutes to 1½ hours, until the cloves are very tender and golden brown.

Once golden brown, remove from heat, scoop out a clove, and smother it on a slice of toasted baguette. Sprinkle with flaky salt and a drizzle of honey, of desired.

2021 CHARDONNAY

Planted by Joe Dobbes himself, the Seabreeze Vineyard is truly a unique terroir. Planted smack dab in the middle of the Van Duzer Corridor, this site gets all the wonderful cooling effects of the afternoon coastal breezes that blow through the vineyard each day. Wind can promote concentration, and preserve acidity, two things much needed in high-end chardonnay. Built to stand the test of time, this chardonnay was fermented in barrel and aged sur lie for nearly 12 months. Just as the wind washes over the vineyard, aging on lees creates a broadness over the palate that washes over your tongue.
