Double Check Your Release
Bottle of Dobbes NV Rosé wine

2025 Rosé

It’s rare that winemakers are given the opportunity to blend wines from different states, vintages, and to a lesser degree varieties, but our Elements Brut has always embodied a bit of a “devil may care” attitude.  Awarding ourselves that freedom has provided us with unexpected harmony and layers of character that would never exist within our perceived traditional boundaries. A significant portion of this blend – Chardonnay and Syrah – spent 16 months in barrel, lending depth, structure, and a subtle richness beneath the bright, lively sparkle, while the Viognier and Roussanne provide freshness and aromatic intensity.  The result is a wine that doesn’t just follow the rules of sparkling – it bends them to create something layered, fresh, and completely its own.

Bottle of NV Patricia’s Cuvée Pinot Noir

2023 Patricia’s Cuvée Pinot Noir

Rated 93 Points + Cellar Selection – Wine Enthusiast

“The incredibly floral Amelia Rose opens up with aromas of dried rose petals and sweet pea flowers that play nicely with notes of briary raspberries, loamy soil and bittersweet dark chocolate. Flavors of tart blackcap raspberries and rosemary join with a pronounced balsa wood note to float along an elegant texture. The wine’s tannins are silky, its acidity lively.” — Michael Alberty

Bottle of Dobbes Symonette Vineyard Pinot Noir

2024 Symonette Vineyard
Pinot Noir

When I started at Dobbes in March 2022, one of the first wines of Andy McVay’s that really caught my eye was his 2021 Smith-Cerne Syrah from the Columbia Gorge. He had originally picked up the Syrah to blend into a big red he was working on, but in the process, stumbled upon a truly special vineyard. Smith-Cerne – one of the first Syrah plantings in the Gorge – is a high-elevation, exposed site that harnesses the wind to create wines with both structure and softness. Fermented with about 20% whole cluster, this Syrah is a New World wine that nods to Old World tradition and technique.

Food & Wine

As the leaves turn and the air cools, our palates shift with the seasons. Fall and winter invite deeper flavors, heartier dishes, and wines that warm from the inside out. With our newest club release, we’ve crafted thoughtful pairings that celebrate the richness of these seasons, whether you’re hosting a holiday gathering or enjoying a quiet evening fireside. Pour a glass, set the table, and let the flavors of the season unfold.

apple cider glazed chicken

Nothing says fall quite like apples, and this recipe brings that seasonal favorite straight to the dinner table. Tender chicken gets a sweet-savory apple cider glaze that’s simple to make but feels a little special – just the kind of cozy dish you’ll want to share with friends, a glass of wine, and maybe even a crackling fire.

RECIPE

butternut squash rigatoni

Creamy, comforting, and just the right amount of cozy – this pasta makes the most of fall’s favorite squash. Roasted butternut blends into a silky sauce that hugs every piece of rigatoni, with a touch of nutty sweetness that pairs beautifully with a glass of wine and a crisp autumn evening.
