Serves: 4 (2 adults + 2 kids)
Time: ~30 minutes
For the salmon nuggets:
1 lb skinless salmon fillet, cut into 1–1½ inch cubes
1 cup panko breadcrumbs (or crushed crackers for kids)
2 tbsp grated Parmesan cheese (optional)
2 tbsp olive oil (plus extra for veggies)
1 egg, lightly beaten
½ tsp garlic powder
½ tsp paprika (optional for adults)
Salt and pepper to taste
For the roasted veggies (choose 2–3):
2 cups baby carrots or carrot sticks
2 cups green beans, trimmed
1 cup broccoli florets
1 cup diced sweet potatoes (small dice for faster cooking)
Olive oil, salt, and pepper
Adult upgrade sauces (optional):
Yogurt-dill sauce (Greek yogurt, lemon juice, chopped dill, pinch of salt)
Spicy sriracha mayo or Dijon-honey sauce
Preheat & Prep:
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly oil it.
Set Up Coating Station:
In one bowl, whisk egg.
In another, combine panko, Parmesan, garlic powder, paprika, salt, and pepper.
Coat Salmon Nuggets:
Pat salmon dry. Dip each piece into the egg, then into breadcrumb mixture, pressing gently to coat. Arrange on one half of the sheet pan.
Add the Veggies:
Toss your chosen veggies in olive oil, salt, and pepper. Spread them on the other half of the sheet pan.
Bake:
Place the pan in the oven and bake for 12–15 minutes, flipping salmon pieces halfway, until the fish is opaque and flakes easily and veggies are tender. (Sweet potatoes may take 2–3 minutes longer; cut small to speed up.)
Serve:
For kids: Serve nuggets with ketchup, ranch, or mild yogurt sauce.
For adults: Add the dill yogurt sauce or spicy sriracha mayo on the side, plus a squeeze of lemon.
Make extra nuggets and freeze before baking for quick weeknight meals.
Try different veggies each week based on what’s in season—Brussels sprouts, parsnips, or cauliflower work great.

1 lb ground beef (or thinly sliced sirloin for a more classic version)
2 tbsp butter
1 tbsp olive oil
1 medium onion, finely chopped
2 cups mushrooms, sliced (cremini or button — or skip for picky eaters)
2 cloves garlic, minced (optional for kids)
1 tbsp flour
1 cup beef broth
½ cup sour cream (or Greek yogurt for lighter version)
1 tsp Dijon mustard (optional for adults)
Salt and pepper to taste
8 oz egg noodles or your favorite pasta
Fresh parsley for garnish
Kid-friendly tweaks:
Use ground beef for a softer, less “chunky” texture.
Leave out Dijon and garlic if needed.
Keep mushrooms on the side or blend finely into sauce.
Cook the Noodles:
Bring a pot of salted water to boil and cook egg noodles according to package directions. Drain and set aside.
Sauté Beef & Veggies:
In a large skillet over medium-high heat, melt butter with olive oil. Add ground beef and onion; cook until beef is browned and onion is softened, about 5–6 minutes. Remove excess fat if necessary.
Add Mushrooms & Garlic (Optional):
Stir in mushrooms and garlic; cook 3–4 minutes until mushrooms soften. For kids, keep mushrooms on one side of the pan or cook separately and fold in later.
Make the Sauce:
Sprinkle flour over the beef mixture and stir for 1 minute to cook the flour. Gradually pour in beef broth, stirring to prevent lumps. Reduce heat to medium-low and simmer 3–4 minutes until slightly thickened.
Finish with Sour Cream:
Remove from heat and stir in sour cream (and Dijon mustard for adults). Season with salt and pepper to taste.
Serve:
Spoon stroganoff over egg noodles. Garnish with parsley if desired. For kids, serve plain noodles with a little butter and top with mild beef sauce on the side for dipping.
