Meatball Ingredients:

  • 2 lbs. ground turkey
  • 1/4 yellow onion, chopped
  • 2/3 cup breadcrumbs
  • 2 tablespoons parsley, chopped
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon pepper

Cream Sauce Ingredients:

  • 1 cup heavy whipping cream
  • ¾ cup white wine, 2020 Sundown Vineyard Viognier is what I used
  • 2 tablespoons flour, all purpose
  • 4 tablespoons of butter
  • 1 tablespoon garlic, chopped
  • 1 tablespoon parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 2 tablespoons stock, chicken or vegetable


  • Preheat the oven to 350 degrees and gather all your ingredients.
  • Line a sheet pan with parchment paper – this will be where you place your meatballs after shaping them.

Prepare Meatballs:

  • In a large bowl combine ground turkey, onion, breadcrumbs, parsley, egg, salt, and pepper.
  • Shape the mixture into small meatballs about 1-1 ½ inch size and place on parchment lined sheet pan.
  • Place a large cast iron/skillet over medium heat and add enough oil to lightly coat the entire pan.
  • After the meatballs are all shaped place into the fridge while the pan heats up. (The cold will help the meatballs keep their shape).
  • Once the oil is hot, add the meatballs and brown on all sides. Remove from the heat and place back on the parchment lined sheet pan.
  • After all the meatballs are browned, place into the oven while the sauce is being made.

Prepare Sauce:

  • Place a medium saucepan over high heat.
  • Add the cream, wine, salt, and parsley – whisk until combined.
  • While whisking, sprinkle in the flour. Make sure this is fully combined and there are no lumps.
  • Add the butter one tablespoon at a time. Whisk until each tablespoon of butter is fully incorporated before adding the next.
  • Bring to a boil for one minute and then reduce the heat and let the sauce simmer until thickened.
  • If the sauce thickens too much you can add a little stock to loosen it back up.
  • Note: Cream sauces break easily! Make sure to whisk fully and slowly heat up the sauce so it does not break.
  • Take the meatballs out of the oven and place into the sauce.
  • Cook the meatballs and sauce for about 3 minutes.

Get Ready to Plate:

  • Garnish with chopped parsley and serve.
