Summer Pairing: 2021 Dobbes Chardonnay with Garlic Confit



Our 2021 Grand Assemblage Chardonnay is an easy one to pair with most of your favorite snacks. With its medium-long finish, carried by citrus-driven acidity, we love it with a simple baguette that has been smothered in a nutty garlic confit. Cooking up quick, you’ll be sip-snacking the summer night away.

  • 3 heads garlic, broken into cloves, ends trimmed, peeled
  • 1 cup extra-virgin olive oil
  • 1 crispy French baguette, sliced and toasted
  • Flaky salt
  • Honey to drizzle


Combine the garlic cloves and olive oil in a small saucepan over medium-low heat and bring to a gentle simmer. Lower the heat, all the way, to maintain a gentle simmer, for 45 minutes to 1½ hours, until the cloves are very tender and golden brown.

Once golden brown, remove from heat, scoop out a clove, and smother it on a slice of toasted baguette. Sprinkle with flaky salt and a drizzle of honey, of desired.

Planted smack dab in the middle of the Van Duzer Corridor, this site gets all the wonderful cooling effects of the afternoon coastal breezes that blow through the vineyard each day. Wind can promote concentration, and preserve acidity, two things much needed in high-end chardonnay. Built to stand the test of time, this chardonnay was fermented in barrel and aged sur lie for nearly 12 months. Just as the wind washes over the vineyard, aging on lees creates a broadness over the palate that washes over your tongue.
