Summer Pairing: Dobbes 2022 Rosé

A punchy and playful Rose deserves an equally playful pairing. Our Dobbes Family Winery Rose plays nicely with these pickled strawberries + tangy goat cheese. A colorful and bright bite followed by a slow sip—summer magic in the making!

PICKLED STRAWBERRY & GOAT CHEESE CROSTINI

FOR THE PICKLED STRAWBERRIES: 

  • 1 1/2 cups halved strawberries (enough to fill a jar) 
  • 1/3 cup white balsamic vinegar 
  • 1 tablespoon sugar 
  • Pinch of salt 
  • 1 tablespoon peppercorns 
  • Water to fill the rest of the jar 

FOR THE CROSTINI: 

  • 1 loaf French bread 
  • 4-ounce packages goat cheese 
  • Fresh thyme leaves 
  • Honey for drizzling
  • Pinch of salt 

INSTRUCTIONS:
For the Pickled Strawberries, place the sliced strawberries in a jar. Add the vinegar, sugar, peppercorns, and salt. Top off with water. Secure the lid and shake gently to combine. Place in the refrigerator for at least two hours, or up to two days. The longer they sit, the mushier they get!  

For the crostini, slice your French bread and fry, grill, or toast. Smear the goat cheese on the toast and top with a few strawberries. Smash them gently with a fork. Sprinkle with bits of thyme, a drizzle of honey, and a hit of salt.

2022 ROSE

Our first release of this unique Oregon blend of Pinot Noir, Grenache, Zinfandel, Tempranillo, and Syrah creates a luscious wine with an intriguing flavor profile.

WINEMAKER NOTES:
In 2022, frost in late spring had us fearing dramatically lower yields. Thankfully, when the sun came out, it stayed; boosting yields and ripening our fruit over a record-breaking dry summer. The dry harvest window meant a near perfect vintage for the style of rose I like to make (and drink). I’ve found that the best often harness the freshness and attitude of an early harvested Pinot Noir, with the roundness and flavor of fruit harvested a little later in the seasonUntraditional as we areat Dobbes the latter harvested component is often a bigger red, like Tempranillo, Grenache or, in this case, Rogue Valley Syrah. This Rosé highlights the unique aspects of the two different varietals, coalescing together in one harmonious blend.


TASTING NOTES
COLOR: Pale Salmon
AROMA: Jasmine, fresh linen, strawberry, mineral
PALATE: Built for a front porch and a warm day, this Rosé is all about freshness on the nose. With a clean, crisp, and surprisingly broad midpalate, that seems to last forever, wonderfully bright acidity, and a light lemon pithiness.
